Beautiful small round and tasty coconut cookies! Can you not love them?!
The recipe is incredibly easy and quick to make (A quick 10 minutes in the oven and you have a tray full of’em!
Getting prepared – about 50 cookies:
- 4 Eggs
- 1 Cup Castor Sugar
- 1 Tbs Lemon Zest
- 1 Tbs Orange Jam (Or any type of jam)
- 3 Tbs Orange Blossom Water
- 50g Butter
- 2 Tbs Vegetable Oil
- 250g Coconut Powder
- 1 Cup Semolina
- Icing Sugar for coating
All Set? – Just quickly preheat your oven to 160C.
Grab a large dish – we used a local large dish used for baking, and start by placing the butter and castor sugar in the bowl.
Now add the oil slowly while stirring/whisking until the mixture is slightly grainy
Add eggs to the mix and stir once again
Once your mixture is evenly colored, add the coconut powder, semolina, lemon zest, orange blossom water and jam. Your newly prepared dough should not be rough or sticky but should hold together well.
Almost done there!
Let the dough rest for 20 minutes. It will get firmer and be easier to handle. You can actually see the change:
After it had rested, pinch your dough and grab a small sized ball, then round it between your hands like so:
Finally, dip in the icing sugar and place on an oven tray. When finished, place the tray in the oven for about 10 – just until the cookies have lightly browned on top.
Let them rest for 1-2 minutes and Eat delightfully!!!
